Origin: Russia

Primary Base: Rye & Wheat Flour

Ingredients: 1-1/4th cup warm water; 1-3/4th cup rye flour; 1-34th cup whole wheat flour; 1 tablespoon melted jaggery; 2 teaspoon vinegar; 1 teaspoon salt; 1 sachet ofactive yeast; coriander seeds; black cumin seeds

Recipe: You can make the dough for this bread manually or by using an automated atta kneader from brands like KENT that will make thejoy of baking even more joyful. Before you begin, add some warm milk to activate the yeast and put it aside. Mix the remaining ingredients in the bread making machine along with the yeast mixture. Within minutes, you will get a soft dough.

Leave the dough to rise for 45 minutes. After that, transfer the dough into a greased breadpan and sprinkle the bread with coriander and black cumin seeds.  Bake is for 45 minutes by setting the oven to 2oo degree Celsius. Once the baking time if over, remove it from the bread tin and let it cool down before you slice the loaf and consume.

Health Benefits: All the ingredients used in this bread are very nutritious. Rye is a very healthy grain. It is excellent for weight loss and is also highly fibrous. Sweet Potato Bread

Origin: Prepared in several parts of Europe namely Hungary, Chile, Germany, Peru, Poland etc.

Primary Base: Wheat Flour &Mashed Sweet Potato

Ingredients:

First the wet ingredients - Half cup brown sugar or jaggery (for a healthy spin), 1 cup Orange Juice, 2/3 cup Coconut Oil, 4 Eggs, 2 teaspoon vanilla extract, 2 medium sized sweet potatoes.

Now, let’s take a note of the dry ingredients – 3 Cups of Whole Wheat Flour, 1-1/2 teaspoon of Baking Powder, 1-1/2 teaspoon for Baking Soda, apinch of salt.

Spice Mix- Cinnamon powder and ground nutmeg (both ingredients optional)

Recipe: First mix all the wet ingredients. Make sure that the sweet potato is mashed and properly incorporated into the mixture. A lump mixture may not likely cook through properly. Sieve all the dry ingredients and mix it to the wet ingredients. Now, transfer the mixture to a greased bread pan or cake tin.  Add the grated spice mix for an aromatic flavour. Bake the bread for approximately 50 minutes at a temperature set to 180 degree Celsius. Run a knife or toothpick to check if the bread is cooked before taking out of the oven.

Ragi Bread


Primary Base: Wheat &Ragi Flour

Ingredients:1 cup of Wheat &Ragi Flour, ½ cup Jaggery, 1 cup olive oil, 1 teaspoon baking soda, for theadditional flavor you can also add a cup of grated/chopped vegetables like spinach, carrots, beetroot, etc.

Recipe:To prepare the dough for the bread, you can use KENT Atta and Bread Maker. Just add all the ingredients andpress the correct operation panel of the appliance to extrude the perfect dough within minutes. Once the dough for the bread is done, transfer it to a cake/bread tin to bakein a pre-heated oven for 45- 50 minutes at a temperature set to 180 degree Celsius.
